Potatoes have gotten a bad rap lately, but we still love them. Blue potatoes are becoming less of a novelty these days and it's become popular to slice them up with the more common red and white varieties, for a patriotic potato salad.
'All Blue' on its own makes a striking side dish. The inside flesh retains some of its blue color when cooked and mashed and the skin is almost purple. Looking at them, you might expect them to be grape flavored, but they're all potato.
